I want to get a housewarming present for friends. I know they really like smoked food/barbecue. They have a standard Weber outdoor grill. Is a Weber Smokey Mountain Cooker Grill a good idea? If they already have a regular grill, will the smokey mountain cooker be too similar to it or will it be a good addition?
Just to add, the couple I would buy this for loves cooking- they are definite foodies and have a kitchen stocked with well researched brand name appliances. I want to make sure I have my facts straight before I give them a big item like a smoker. Thank you all!
That all depends on the style they enjoy, If they enjoy grilled foods then it will not be a good addition as a standard webber is a great grill, If on the other hand they enjoy fall off the bone tender meat cooked for hours over low and slow heat then they would love the smoker.
I have a nice jar of barbecue sauce that I’d like to use on some grilled chicken (bone-in chicken). What is the best way to grill the chicken, using the barbecue sauce, without having it turn into a black tar type mess by the end of the cooking period? (I’ve tried this process before, but I could use an expert opinion.) Please help!
Well, I’m not an expert but I have found that this method always works. Grill the chicken (skin side down)first and when it’s almost done (turn it and) you begin to baste it with the sauce. I like to alternate basting with a small spritz of diluted sauce or melted butter.

I am making baby back ribs tomorrow and the recipe calls for the membrane sheath to be removed prior to seasoning. What is it and how do I remove it?
It is the lining on the bone side of the ribs. If you don’t remove it, the ribs will not take your seasoning well and they will literally fall off the bone if you do.

in north carolina, "barbecue" refers to shredded pork, a tangy hot and sweet sauce added to it, served with slaw mixed in, either on a bun or not. anything "else" isn’t barbecue.
Well I could write a novel on BBQ in home towns, as I have lived all over the south eastern united states, and experienced all sorts of diffrent varieties off what people consider "BBQ". Being a purist BBQ is to me cooked low and slow using wood in indirect heat. That being said, here is what I hve come across.
In Florida it has been sliced pork (usually pork shoulder) smoked and often served with just dry rub with a tomato/vinegar based bbq sauce kinda in the nuetral taste zone. Came with Texas Toast, and BBQ beans.
In Georgia it usally pulled pork/or pulled and chopped (usually pork butts) mixed with a sweet tomato/vinegar based sauce (think they use maple syrup as a thickener in the sauce). Usually offer the bbq beans, brunswick stew, collard greens and texas toast.
Alabama and Tennesse I have come across basically the same..pulled pork (athough some have used ham’s instead of shoulder or butts.) With a tangier tomato/vinegar based sauce. Traditional BBQ Beans and cole slaw as sides. I haven’t made it to Memphis though or kansas city, but would love to be able to travel a try all sorts or BBQ, love anything smoked over wood. No, some use charcoal. I have a gas grill, because it heats up quickly and I don’t have to fight with it to get the charcoal going.
my grill is stained from the weather/rain, is there something i can use to clean it up to make it look new again? i’ve tried stainless steel cleaner and tried vinegar neither seemed to do the trick. anybody have any secrets? thanks!
First, for the inside on the cooking grids, you can use a grill stone. Another approach is my "deep-cleaning" cycle which entails putting a few sheets of tin foil over the bbq grill cooking grid, and cranking the heat for a half hour.
This really cleans things (kinda like a self-cleaning oven) as it turns everything to ash – be sure to check your grill warrenty to make sure this is OK to do..
You’ll still have some greese goop on the sides, but hey, that adds some seasoning flavor!
My BBQ Grill has ceramic tamers to disperse the heat (versus metal) and I’ve heard of various approaches to cleaning them … but these seem like a lot of work and run the risk of breaking ‘em. All I do it turn ‘em over!!!!
After they have cooked a few times, anything on the bottom has turned to ash; so when you rotate it, you got a pretty clean top – now that is an incredibly easy how to eh?!?
For the outside, wipe off any major food goop, then hit it with some "Bar Keeper’s Friend" which is a cleaning powder. This can scratch the stainless, so be careful. I then finish with "Stainless Steel Magic" which was recommended by a friend … and I tell ‘ya … it *IS* Magic! Be sure to cover it up when done
Or do they? It occured to me today as I was scrubbing the grill for the bar-b-que…. why is this not coated with teflon? It seems it would be a lot easier, if it was a non-stick surface?
My Char-Broil has it, or something similar to Teflon. It’s definitely non-stick coated.
