Ok first off, NC BBQ is not a technically correct term. It is divided into eastern and western (Lexington). *don’t you forget that!* Eastern sauce is as you mentioned vinegar based with a bit of hot peppers added and used as a moistening agent more than a sauce. Western Lexington style adds tomatoes in the form of ketchup.technically you would never see a lexington style pig pickin cause Lexington BBQ uses only pork shoulder (butt). Lexington style all the way! by the way E = chopped, W= pulled

I’ve never been to a pig pickin’ either so this was a little disturbing especially when he added that red sauce to barbecue – that’s sacrilege in the Tarheel State!
I guess Carolina style barbecue would have a vinegar based sauce added at the end directly on the hog. Anybody from Lexington, NC out there to confirm this? Bill’s? Parkers? Wilburs? Heh.

A few questions, if you please: What were your temps in the smoker? Target temps for the pigs? Where’d you get that fancy smoker? Did you find uses for all the meat? Finally, did the different parts of the pig vary in flavor and moisture much?
