    It’s quite black but it’s not burnt at all, it’s just the hot searing forming a crust on the outside. The inside is still medium-rare, he definitely should have let it rest though. No point having juice all over the plate.

    You really should try medium. There is no danger from it unless the situation is unusual enough for the well done portion to have been bad for you as well.

    You’re 100% correct. That’s exactly what that is. Furthermore, he said “bright red”? I beg to differ. The most tender and flavourful steaks I’ve ever had have been more rusty brown in colour than bright red.

    i used to do that too, but then i started to really appreciate the taste of the meat. granted you can taste meat when its well done, im just saying when its pink in the middle it tastes really good! but i definitely dont like blood in my plate ;)
